In the Caribbean there are many wonderful dishes to be enjoyed. The cuisine fuses local, indigenous dishes with European, Anglo Saxon and Oriental cooking, a fusion which has been forged over years of permanent colonizations by various colonial powers. The resources of the region, vegetables, fish and seafood, give an impressively varied cuisine, something which is reflected in the great number of restaurants. To eat in the Caribbean is to enjoy a rich and varied gastronomy, which began to develop into what it is today after the arrival of Columbus in 1492. After this date, people from Asia, Africa and Europe began to come to the region, and fusion dishes began to appear. The resulting mix of cuisine is typified by spices, fruits, fresh fish and fresh vegetables. It goes without saying that there is a wide of tropical fruit here, such as guavas, mangoes, bananas and cassavas.
